7306C Thermal CirculatorThe 7306 Thermal Circulator is the machine I use for my sous vide cooking. I have been using it daily since may 7th 2008. I try to set up learning center sites for the equipment I really enjoy using. When his page is complete it will look something like my ProVacuumSealers.com site.

Unfortunately I still have a bit more research to do before I am ready to record the videos.

I honestly had no idea just how much I would find myself using a thermal circulator. Once I started experimenting with the machine, the more uses I found for it.

One use for a thermal circulator is to poach eggs in the shell. Set it to 147 F. and cook an egg in the shell for 45 minutes and you have a great poached egg. I've found that if you set the circulator to 138 F you could leave the egg in overnight. When you wake up in the morning you'll have breakfast ready.

Most people don't know that you can remove the clamp from the 7306c thermal circulator and modify the lid on a cambro plastic full pan to create a great vessel. If you want to learn more about this please contact me via AskRogerSeher.com and I will tell you how I made mine.

Roger's Modified Cambro Lid

I have modified a few cambro 12 x 18 lids by cutting a U-shaped hole in the lid on the back edge. This allows me to use a lid on my cambro container (without the square guard). This helps to keep the heat and water inside.

This is different from the video above because the thermal circulator can now be mounted to the back of the cambro container. This allows you to remove the lid if needed. This comes in very handy if you are doing vegetables at 185F. It also helps to keep the bags from slipping under the circulator it's self.

Along with the lid I designed a dishwasher safe backer block that will protect the back of the cambro container from the thermal circulator's clamp. I only made a small run of 10 modified lids and backer blocks. So if you want one better hurry, they will go quick.
